Zhangjiajie Bayberry Tea, a small-leaf variety of Ampelopsis grossedentata, grows in the Wuling Mountains with Zhangjiajie as its core area, also known as small-leaf climbing tea. In 2013, it was approved by the former National Health and Family Planning Commission of China as a new food ingredient. This plant contains natural active components called flavonoids, with an average total flavonoid content of over 26% in its young stems and leaves. The highest total flavonoid content is found in the buds, reaching up to 43.78%, making it the plant with the highest flavonoid content among all discovered plants and earning it the title of 'King of Flavonoids'. Due to the breaking of cells during processing, the flavonoid active components contained in the cellsPermeate to the surface (penetrate to the surface), forming a layer of 'white frost', hence it is called 'Bayberry Tea'.
